Recently, I have been using balsamic vinegar, especially balsamic glaze in and on almost everything lately. It’s a fantastic way to bring a fresh acidity or sweet flavor to a savory dish.
With how busy I have been with work, I haven’t taken the time to experiment with baking. One of my favorite things with sweets is to play with tying in as many savory flavors as possible! Balsamic vinegar being my new ingredient!
Surprisingly I learned, that vinegar actually pops up in a lot of baked goods as a quick and easy way to add an acid to a recipe. This allows a leavening agent like baking soda to get a little extra lift when added to the batter.

I am going on my 3rd week of sticking to a vegan diet and I must say these past few days have been the hardest for me! This is my twist on a Caprese Salad. It’s definitely one of my favorite sides during the summer time when tomatoes are at their peak, but I couldn’t resist when I saw tomatoes and basil in the fridge this morning! Not only is this salad a wonderful addition to any cut of steak or chicken, but would be perfectly delicious filling a whole plate in my house!
I used a simple balsamic reduction, which results in a pretty presentation and gorgeous flavor! You will literally start putting it on everything after the first time you make it.
