I will definitely not take credit for the carved pumpkin soup bowls. This is a Shirley (my mom) staple for sure! One of my favorite High School memories was having all of my friends over to my house for dinner before the big Homecoming Dance in the fall. My mom served up Wild Rice Soup in carved out pumpkins (keep in mind there were about 16 of us…).
Ever since then, I want to eat my soup out of nothing other than a pumpkin! Warm up in this chilly weather and enjoy this delicious, yet simple Vegan Corn Chowder! In a pumpkin bowl of course… Read more
Being an absolute crazy pickle lover, I will never really understand people who don’t like pickles. Not to mislead you into thinking I do not have pickle hating friends… I do. Before the burger can even touch the table they are throwing all their pickles my way… I mean c’mon, it cant get much better than that!
This weekend it was my goal to dive into learning how to pickle some of these delicious summer veggies, without necessarly having to learn how to/buy the equipment to can.
Quick pickling is also a brilliant solution for preserving an assortment of vegetables from the market or your garden. Whenever I make a stop back home, I can always expect to leave with an assortment of mismatched groceries from my parent’s fridge. “Maddie do you want hummus… raspberries… wonton wrappers… or zucchini to take with you…?” My mom yells upstairs. Of course I agree to taking everything with me. Sunday grocery shopping in the city might just be the WORST. I’m then left with the misleading challenge of creating meals from my Chopped mystery ingredient basket…
I will say, one of my greatest talents has to be creating dishes from nothing, this recipe being the aftermath of one of those situations. I was left with hummus, wonton wrappers, and craved something fried. Voila! The spicy garlic wontons came to life!
Avocados are hands down one of my favorite snacks and a great addition to just about anything! When I am getting ready in the morning, I will crack eggs into my halved avocado and toss them in the oven. In 20 minutes, I have a vitamin packed breakfast that is great to spread on bread or simply to enjoy with a spoon!
One big tip I have is to scoop out about 1-1.5 tablespoons of avocado (wide not deep) to create enough room for your egg. Otherwise it will overflow!
It’s finally snowing here in Chicago, which calls for a cozy blanket, holiday music, and a delicious hearty soup!
This Moroccan Spiced Chickpea Soup was created by my laziness to walk outside to get groceries in this snowy morning! The blend of spices are really what makes this soup special! All you really need are some canned chickpeas, canned tomatoes, and quinoa… pantry necessities!
Last night I decided to head back to the suburbs for a quiet night away from the sirens and taxi horns and I’m so glad I did! I feel like since starting my new job and moving downtown I just haven’t taken a second to just relax and actually truly cook.
The frittata below is the ultimate low calorie, yet rich, vegetarian breakfast! So many times after eating an omelet or skillet, I feel overly full. This egg white frittata recipe is packed with vegetables and herbs, but unlike your corner diner’s breakfast, it’s a light and energy boosting meal!
