Recently, in the world of Food Blogging, a new trend is experimenting with a pastry called a Galette. In my research, I have seen everything from sweet to savory when it comes to flavors. Me being a more savory girl myself, I’ve decided to create a savory Galette with beets, potatoes, and goat cheese. Overall, beets and goat cheese are one of the best combinations in my opinion and have become very popular in many restaurants! The earthiness of the root vegetable is a fabulous pairing with the bright and creamy flavors of the goat cheese.
At culinary school I had I learned more about food than I could have ever imagined, but nothing has tested me more than starting my own food blog. Recipe testing can be one of the most exciting, rewarding, yet frustrating jobs. The most difficult challenge that I face is that the possibilities are endless! For me, it’s either making the most of what is in my pantry or casually strolling around the grocery store until an ingredient inspires a dish. From my experience so far, my favorite and most memorable dishes have simply allowed one ingredient be the star of the show. Whether it is jazzing up that one ingredient with spices or herbs, my new moto is “The simpler the better!”

When I moved in Savannah, GA naturally one of my biggest worries wasn’t moving halfway across the country, but was making sure that I lived walking distance from a coffee shop. My spot was called Collins Quarters. The open, airy, and modern space was the perfect environment to read and write.
Not only is the Mocha Lavender Latte unbelievable, but Collins Quarters actually has some of my most favorite dishes in Savannah. My favorite dish, that I still crave till this day, is their Smashed Avocado Toast with a poached egg. On two slices of crispy thick sourdough, the creaminess of the avocado and poached egg is cut by the freshness of the heirloom tomatoes and pepperiness of the radishes. Read more
