Gnocchi, like perogies, have been a staple comfort dish in my family since I can remember. My mom would prepare it with a basic red sauce or simply tossed in melted butter. When it comes to delicious fresh gnocchi, it is always better to keep it simple!
I am going on my 3rd week of sticking to a vegan diet and I must say these past few days have been the hardest for me! Being vegan is easy…. until your faced with the challenge of saying no to every egg dish on that glorious brunch menu or it’s your moms birthday at a restaurant known for their succulent and mouthwatering duck. Going out to eat hands down brings out every vegans little devil on their shoulder. That guy doesn’t seem to shut up until the menus are gone!
YES the filling is made with avocado, but you’d never know it! The flavor of the peppermint extract hides any flavor of avocado, but the light creaminess of the avocado gives these bars a heavenly texture!
Even though these are technically dessert bars, they are packed with protein and superfoods. Just like the avocado is hidden, so is the “healthy” flavor and nutritional benefits!
It’s quickly approaching summer and to me that means watermelon season! Watermelon is hands down my favorite food. Usually, when I tell people I get the oddest looks. Yes, out of all the amazing dishes and ingredients I have tried, a refreshingly juicy bite of watermelon is still top of my list. This is my twist on a Caprese Salad. It’s definitely one of my favorite sides during the summer time when tomatoes are at their peak, but I couldn’t resist when I saw tomatoes and basil in the fridge this morning! Not only is this salad a wonderful addition to any cut of steak or chicken, but would be perfectly delicious filling a whole plate in my house!
I used a simple balsamic reduction, which results in a pretty presentation and gorgeous flavor! You will literally start putting it on everything after the first time you make it.
