Let be honest, anything dipped in sugar and fried is not 100% great for you… but if you’re going to eat a donut I highly recommend giving these a shot! Even though they are delicious warm, these donuts are also a very convenient dessert to travel with to a party and easy for guests to eat!

Every time I open a restaurant menu and to see jalapeno poppers under the appetizers, it’s like the remainder of the menu is a blur. It’s not even an option, I have to order the addicting spicy bites! This past weekend in Chicago, I fought over the last of Old Crow Smokehouses amazing bacon wrapped jalapeño poppers! They sparked the idea of me making jalapeno poppers of my own. Instead of using a bacon, that it most commonly used, I decided to go with a Mexican chorizo. The deep smoky and spicy flavor of the chorizo could not be a better match with the cream cheese and fresh jalapeno.

One of my best friends from Culinary school is now on a strictly raw and vegan diet. Most the time I am in amazement of how she sticks to such a strict diet, but when I found out that she could eat things like raspberry cheesecake bars my sympathy quickly went out the door!

The secret to the creamy cheese-like texture and taste is the soaked cashews and the power of a good food processor. The longer you soak the cashews the creamier the texture. I recommend soaking over night, but if you’re not one to plan ahead then soak the cashews in boiling water for 1-2 hours. Read more
