Eggs Baked In Avocado


Avocados are hands down one of my favorite snacks and a great addition to just about anything!  When I am getting ready in the morning, I will crack eggs into my halved avocado and toss them in the oven.  In 20 minutes, I have a vitamin packed breakfast that is great to spread on bread or simply to enjoy with a spoon!

One big tip I have is to scoop out about 1-1.5 tablespoons of avocado (wide not deep) to create enough room for your egg. Otherwise it will overflow!

Eggs Baked In Avocado

Servings: 2

Bake Time: 20 Minutes

-2 avocados
-4 large eggs
-salt and pepper, to taste

Optional Toppings
-1 tbsp goat cheese or grated Parmesan
-1 tbsp cilantro, chopped
-1 tbsp cooked bacon, crumbled
-1 tbsp chives, chopped


1. Heat the oven to 425 degrees.
Slice the avocados in half, lengthwise and twist to separate.  Remove the pit and scoop out 1-1.5 tablespoons of avocado, creating a larger cavity.

2. Gently crack one egg on top of each half.
Sprinkle with salt and pepper. Bake for 15-20 minutes. Add your toppings!  I also added sesame seeds last minute! :)
