Being an absolute crazy pickle lover, I will never really understand people who don’t like pickles. Not to mislead you into thinking I do not have pickle hating friends… I do. Before the burger can even touch the table they are throwing all their pickles my way… I mean c’mon, it cant get much better than that!
This weekend it was my goal to dive into learning how to pickle some of these delicious summer veggies, without necessarly having to learn how to/buy the equipment to can.
Quick pickling is also a brilliant solution for preserving an assortment of vegetables from the market or your garden. It also gives you the freedom to get a little creative with the different types and quanities of herbs and spices! I highly recommend all my pickle lovers to give it a try for themselves! Read more
I am about ready for these teaser 70 degree “summer days” to turn into the real deal! Last week I enjoyed this delicious grilled flatbread with a glass of red wine on my rooftop, and this week I am battling through the rain in my winter coat on my way to work…
Here is a recipe for one of my favorite vegetarian flatbreads made on the grill in hopes of warmer weather! Enjoy!
Whenever I make a stop back home, I can always expect to leave with an assortment of mismatched groceries from my parent’s fridge. “Maddie do you want hummus… raspberries… wonton wrappers… or zucchini to take with you…?” My mom yells upstairs. Of course I agree to taking everything with me. Sunday grocery shopping in the city might just be the WORST. I’m then left with the misleading challenge of creating meals from my Chopped mystery ingredient basket…
I will say, one of my greatest talents has to be creating dishes from nothing, this recipe being the aftermath of one of those situations. I was left with hummus, wonton wrappers, and craved something fried. Voila! The spicy garlic wontons came to life!
Looking for the perfect appetizer? This pull apart bread takes just a few minutes to throw together and is definitely a crowd pleaser!
Each bite is a great combination of creamy yet fresh flavors, which are all brought by the addicting basil dipping sauce! Read more
It’s 5 degrees outside today and I have very little to no motivation to even step outside into the frozen Windy City! Grocery shopping… no thank you! So quickly I became a contestant on the show Chopped with my fridge of 5 ingredients being my “basket.”
Now I wasn’t given the challenge of wasabi candy canes or banana ketchup…. but rather chicken breasts, vegetable stock, Brussels sprouts, onions, and carrots! Probably the easiest Chopped basket ever given. Not much of a “challenge,” but one pretty darn good soup on such a cold day! Read more
It’s tough to stick with a healthy diet, especially during the week days. These vegan stuffed portobello mushrooms are an easy meal to whip up for lunch or dinner after a long day. They are packed with nutrients and protein and take just about 20 minutes to make. Read more
This Sunday was well spent at the Wicker Park Famers Market. Beautiful vegetables, fruits, breads, and a adorable crepe stand!
