It’s quickly approaching summer and to me that means watermelon season! Watermelon is hands down my favorite food. Usually, when I tell people I get the oddest looks. Yes, out of all the amazing dishes and ingredients I have tried, a refreshingly juicy bite of watermelon is still top of my list. If you want to get on my good side it’s simple, just bring me a watermelon!
I love this recipe below because it makes watermelon so much more than just a snack. Never would I have guessed that the tangy bite of feta would pair so perfectly with the sweet watermelon, but it’s definitely made a mark on one of my favorite flavor combinations! The addition of the cilantro and mint simply add a earthy brightness to the dish. Even though you may be hesitant of the savory flavors paired with the watermelon, I highly recommend stepping outside your comfort zone and giving this summer salad a try!
Watermelon & Feta Salad
- 1/2 watermelon, cut into even slices
- 1/2 cup cilantro, roughly chopped
- 1/2 cup mint, roughly chopped
- 1/2 cup feta cheese, crumbled
1/3 cup extra virgin olive oil
Juice of 2 medium limes (about 1/3 cup)
1/4 – 1/2 tsp tabasco sauce, or to taste
1/2 tsp sea salt
1/8 tsp black pepper, freshly ground
-Whisk ingredients together, drizzle over salad.
- Combine the watermelon, feta, and herbs in a large bowl.
- Drizzle the dressing over the watermelon mixture and gently toss until incorporated.
- Plate and serve chilled!
